The Project
Il Mozzico is a tapas and local food format designed for the modern aperitivo. A sommelier and a gastronome at every location, with a central workshop at Il Locale.
The name says it all: a “mozzico” is a bite, a nibble, something small but intense. The format brings restaurant-level quality to the neighborhood aperitivo, with genuine products, carefully curated pairings and a hospitality that’s informal yet expert.
The central production workshop is Il Locale in Montesacro: from here, the food is made and distributed daily to satellite locations, guaranteeing freshness, consistency and quality control across the whole network.
The Model
The Central Workshop
Il Locale produces all the food daily: tapas, preparations, artisanal preserves and cured meats. Controlled quality, standardized recipes, a consistent identity.
The Satellite Locations
4 venues across the district plus Il Locale as the central hub. Each location operates with a sommelier and a gastronome, within a 2km radius, reaching restaurants, businesses and private customers.
The Wine Cellars as Warehouses
The Mozzico locations and other selected cellars serve as decentralized warehouses for wine distribution, both HoReCa and private, integrating with Enoteca Di Francia.
The Franchising Format
A replicable model: each satellite location receives training, products, brand identity and operational support. A system that scales while keeping the product’s artisanal soul.
